What are the best apples to use in pies?

The ‘go-to’ apple for apple pies is the Granny Smith.  This is because they are a little bit tart so the addition of sugar and spices doesn’t result in an overly sweet pie.  Also, Granny Smiths are a firm apple and tend to hold their shape when cooked.  Other tart apples include Braeburn, Pink Lady, and Gravenstein.  If you prefer something a little sweeter, both Fuji and Golden Delicious hold up pretty well during cooking.

My wife likes to blend her apples when she makes a pie. She will use McIntosh because it cooks down and provides a little sauce in the pie, and she will also use a firm apple that will hold up well.
