Asparagus

I love asparagus and I’m wondering if it’s a good idea to roast it.  I hate to waste good asparagus, will it become tough?

Asparagus tastes great when roasted.  Heat the oven to 400 or 425 and toss the asparagus with olive oil and sprinkle with a little salt and pepper.  The roasting time will vary based on the thickness of the stalks.  I like to roast them just until the tips start to brown, which usually takes about 10 minutes.  This adds a nice caramelized flavor and the stalks remain crunchy.  Once the spears are roasted, I squeeze a little lemon juice over them or sprinkle on some Parmesan, or both!  Enjoy!
