Arugula Salad with Cranberries

Arugula, also known as rocket, is a slightly bitter leaf that pairs well with sweet and salty ingredients, such as Parmesan and cranberries. Try using Parmigiano-Reggiano for this dish - the flavor makes a huge difference!

  • 2 ounces Parmesan cheese, such as Parmigiano-Reggiano
  • 1/3 cup dried cranberries
  • 6 ounces arugula, washed, dried and tough stems removed
  • 2 teaspoons champagne or white wine vinegar
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons extra virgin olive oil

Serves 4 to 6

  1. Using either a vegetable peeler or a coarse grater, shave or grate the Parmesan cheese.
  2. In a large bowl toss together the dried cranberries, Parmesan and arugula.
  3. To make the vinaigrette, measure the vinegar and mustard into a small bowl.  While whisking, add the olive oil in a slow and steady stream until incorporated.  Add a pinch of salt and pepper to taste.
  4. Drizzle the vinaigrette over the salad and toss well. Serve immediately.
