Baked Potato Wedges

These potato wedges are an oven-baked version of thick cut fries. They make a great side dish whenever potatoes are appropriate.

  • 2 pounds russet potatoes
  • olive oil
  • kosher salt

Serves 4

  1. Preheat the oven to 375F.
  2. Line a large baking sheet with parchment paper or a non-stick silpat mat.
  3. Peel the potatoes (if desired) and cut them in half lengthwise, and then cut each half into length-wise wedges that are about 1/2-inch thick.
  4. Lay the potato wedges on the prepared baking tray in a single layer. Brush the potatoes with olive oil and sprinkle all over with kosher salt.
  5. Bake the potatoes for 40 minutes, or until they start to brown and are soft in the center. Serve hot or at room temperature.
