Beef and Vegetable Kebabs

This is a tasty, simple kebab (or kabob). Serve these beef skewers with rice and a salad for a full meal, or serve them as appetizers for a casual party.

Ingredients

  • 1 1/2 pounds beef sirloin or rib eye
  • 1/4 cup Worcestershire sauce
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon chopped garlic
  • 8 ounces button mushrooms
  • 1 medium yellow onion
  • 1 large green or red bell pepper
  • Special equipment: Wooden or metal skewers

Serves 4 to 6 as a main

  1. Cut the meat into 1-inch pieces and place the pieces in a large glass bowl. Add 1 teaspoon salt and 1/2 teaspoon pepper and toss to coat. Add the Worcestershire sauce, soy sauce, balsamic vinegar, olive oil, and garlic, and stir to combine. Leave the meat at room temperature for 15 to 20 minutes while you prepare the other ingredients, or cover tightly with plastic wrap and refrigerate for up to 4 hours.
  2. Clean the mushrooms by wiping them with a damp towel or mushroom brush. Remove any large, woody stems and cut large mushrooms in halves or quarters.   
  3. Cut off the top (non-root end) of the onion, and then cut the onion in half vertically through the root. Peel the onion halves and then cut each half into quarters. Separate the onion ‘petals’ for threading onto the skewers.
  4. Cut the pepper in half length-wise, and then remove the stem, seeds and white ribs. Cut the pepper into 1-inch pieces.
  5. When ready to cook, preheat the oven to 450F and place the oven rack in the top position. Line one or two baking sheets with aluminum foil.
  6. To assemble, thread 1 meat cube onto a skewer, followed by an onion petal, a mushroom, and a piece of bell pepper. Leave a 1/4-inch space between ingredients so they will cook more evenly. Continue threading and alternating ingredients onto the skewer until the skewer is full. Place the filled skewers on the baking sheet(s) about 1-inch apart.
  7. Roast the kebabs for 8 to 10 minutes, depending on desired doneness of the meat, turning once during cooking.  Serve hot.
