Capellini with Fresh Tomato Sauce

Tomatoes are truly at their peak in the summer. Make this deliciously simple dish at the height of the tomato season.

  • 3 pounds ripe tomatoes
  • 1 garlic clove, minced
  • 2 tablespoons fresh lemon juice
  • 1 pound dried capellini (angel hair) pasta
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup chopped fresh basil
  • To serve:
  • Freshly grated Parmesan cheese

Serves 4 to 6

  1. Bring a large pot of water to the boil for cooking the pasta.
  2. Meanwhile, core and chop the tomatoes into 1/2-inch pieces. Place the tomatoes in a large bowl and toss with the minced garlic, lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper. Set aside.
  3. Cook the pasta according to the package directions (should be about 3 minutes cooking time.)  Drain the pasta in a colander and toss with about 1 tablespoon of extra virgin olive oil.
  4. Add the pasta to the bowl with the tomatoes, add the basil and toss well. Serve warm with freshly grated Parmesan cheese.
