Carrot and Raisin Salad

This carrot salad is slightly sweet, slightly tart and very refreshing. Yogurt is added to thicken the dressing and adds an interesting twist to the flavors.

  • 1 teaspoon honey
  • 3 tablespoons extra virgin olive oil
  • 3/4 cup plain yogurt
  • 4 to 6 large carrots
  • 1 cup raisins
  • 1/4 cup fresh chives

Serves 4 to 6

  1. In a small bowl whisk together the honey and olive oil. Add the yogurt and mix well to combine. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
  2. Peel the carrots and cut them into matchstick-size pieces. Place the carrots in a large bowl with the raisins.
  3. Add 2/3 of the yogurt mixture and stir well to combine. Add more yogurt mixture as desired.
  4. Taste and season with more salt and pepper as desired. Add the chopped chives and stir once more. Serve immediately or cover and chill for up to 8 hours.
