Chicken Kebabs with Honey Mustard Sauce

Ingredients

  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons dry white wine (such as sauvignon blanc)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch cubes
  • Special equipment:
  • Metal or bamboo skewers (if bamboo, soak in water for 15 minutes before cooking)

Serves 4 to 6 as a main

  1. Make the honey mustard sauce by whisking together the honey, mustard, white wine, olive oil, vinegar and 1/2 teaspoon salt in a medium bowl. Remove about 1/4 cup of the sauce to a clean bowl and set aside for serving.
  2. Cut the chicken into 1-inch cubes and place the cubes in the sauce. Marinade the chicken at room temperature for 15 minutes or cover and place in the refrigerator for up to 4 hours.
  3. When ready to cook, position an oven rack about 6 inches from the broiler. Preheat the broiler.
  4. Skewer the chicken so that the pieces are about 1/2-inch apart. (The chicken will cook more evenly if there is space between the pieces.) Leave room on either end of the skewer for turning and handling. Place the skewers on a broiler pan or baking sheet; they can be close together but not touching. Discard any marinade remaining in the bowl.
  5. Place the chicken skewers under the broiler and broil for 4 minutes on one side. Turn the skewers over and cook for 3 minutes more or until cooked through.  (Alternatively, you can cook the chicken kebabs on a preheated grill.  Cook for 7 to 8 minutes total, turning once or twice to ensure even cooking.)
  6. Serve immediately with the remaining sauce drizzled over the chicken.

I had to send you an email to tell you that you have seriously changed my cooking life!  I have never been much of a cook. I have a busy career and have young children and was always scrambling at 5pm to make something quick or to get take out.  It always tasted just OK but I wanted to eat healthier.  Then I got turned onto your website and it is amazing!  The meals taste great and are really easy to make.  I really ENJOY cooking now and my husband is thrilled.
