Coconut Pound Cake

Pound Cake is the perfect dessert. It is easy to make and can be dressed up in many ways. Add ice cream, chocolate sauce, caramel or a smear of butter.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder (1 1/8 teaspoons for high altitude)
  • 1/2 teaspoon salt
  • 1 cup sugar (reduce by 3 tablespoons for high altitude)
  • 1/2 cup unsalted butter, at room temperature
  • 2 eggs
  • 1/2 cup milk (plus 2 tablespoons at high altitude)
  • 1 tablespoon coconut oil

Makes one loaf

  1. Preheat the oven to 325F and arrange a rack in the center of the oven.  Lightly grease a 9-inch x 5-inch x 2-inch loaf pan.
  2. Whisk together the flour, baking powder and salt in a medium bowl.
  3. Combine the sugar and butter in a medium mixing bowl.  Using the paddle attachment of an electric mixer (or use a handheld mixer), beat together the butter and sugar on medium-high speed until the mixture is pale in color.  
  4. Add the eggs and then the milk, mixing between additions.
  5. With the mixer on low speed, slowly add the dry ingredients and then the coconut oil.  Mix just until everything is combined; don't over mix or the cake will be tough.
  6. Pour the batter into the prepared loaf pan.
  7. Bake the cake for 50 to 55 minutes, or until the top has browned slightly and a toothpick inserted in the center comes out clean.
  8. Cool in the pan on a wire rack, and then turn out of the pan and slice.  Once the cake is completely cool, wrap it in plastic wrap and store at room temperature.
