Coleslaw with Spicy Lime Dressing

Cabbage and lime is a great combination, and this coleslaw salad is light and delicious. Try it for your next picnic.

  • 2 tablespoons mayonnaise
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/2 tablespoon sugar
  • 1 small serrano or jalapeno chile (optional), seeds removed and finely chopped
  • 1 small garlic clove, minced or pressed through a garlic press
  • 1/2 teaspoon sesame seeds
  • 1 small head cabbage (about 8 ounces), core removed and leaves shredded
  • 2 carrots, cut into matchstick-size pieces

Serves 6 to 8 as a side

  1. In a medium bowl combine the mayonnaise, olive oil, lime juice, mustard, thyme, sugar, chile (if using), garlic and sesame seeds. Whisk well to incorporate.
  2. In a large bowl combine the cabbage and carrots. Add just enough of the dressing to coat the vegetables; taste and add more dressing as desired. Serve at room temperature. (Note: Slaw can be made up to 4 hours in advance; keep it covered in the refrigerator and bring to room temperature before serving.  Extra dressing can be kept in the refrigerator for up to 3 days.)
