Fruit Salad with Poppy Seed Dressing

Fruit salad is a delicious and simple way to celebrate summer. Dress it up with this poppy seed dressing and it will be an even bigger hit.

  • 4 cups fresh fruit, such as melon, banana, apple, strawberries, etc., cut into bite size pieces
  • For the dressing:
  • 1 1/2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon poppy seeds

Serves 4 to 6

  1. Place the cut fruit in a large serving bowl.
  2. In a medium bowl, combine the sugar, salt, and vinegar. Whisk well to combine.
  3. Add the olive oil to the other dressing ingredients, pouring it in a slow, steady stream while whisking constantly. (This will allow the dressing to combine or emulsify.)
  4. Stir in the poppy seeds and then drizzle the dressing over the fruit. Toss well and serve immediately, or refrigerate and serve within a few hours.
