Carrot recipes abound, but don't forget about this truly simple dish. It's not only colorful and tasty, it's a kid-friendly vegetable!

  • 1 pound carrots, cut into cross-wise rounds, 1/4-inch thick
  • 2 tablespoons butter
  • 1 teaspoon sugar or brown sugar (or to taste)
  • fresh chopped parsley for garnish (optional)

Serves 4 to 6 as a side

  1. Fill a medium-size stock pot 2/3 full of water and bring the water to a boil.
  2. Blanch the carrots by plunging them in the boiling water for 3 minutes.  Drain the carrots into a colander and run cold water over the carrots to stop the cooking.  (Carrots can be prepared to this point up to 2 days ahead.  Keep the carrots in an airtight container in the refrigerator.)
  3. When ready to serve, melt the butter over low heat in a medium saucepan.  Add the carrots and sugar and continue cooking over low heat, stirring occasionally, until the carrots are cooked through, about 10 minutes. Taste and add salt and pepper as desired.
  4. Serve hot with a sprinkling of chopped parsley, if you like.
