Green Beans with Almonds

Green beans add color and crunch to any meal. This green bean recipe is elegant enough for company but easy enough for weeknight dinners.

  • 1 pound fresh green beans
  • 2 tablespoons butter
  • 1/2 cup slivered almonds
  • 1 shallot, finely chopped

Serves 4 to 6 as a side

  1. Bring a large pot of water to the boil.
  2. Cut the stem end off of the green beans (leave the curled end in place.)  Add the beans to the boiling water to blanch them; cook for about 3 minutes.
  3. Drain the beans into a colander and run cold water over them until they are cool.  (Beans may be prepared to this point up to a day ahead.)
  4. In a medium saucepan, melt the butter over medium heat.
  5. Add the almond slivers and cook, stirring constantly, about 3 minutes. Add the shallots and continue to cook just until the almonds start to brown, about 1 minute more.
  6. Add the beans and toss the ingredients well.  Taste and add salt and pepper as desired.  Serve immediately.
