Halibut Roasted with Capers and Lemon

Halibut is a mild white fish, and here the delicate flavor is enhanced with the clean bite of capers and lemon. This dish is mostly hands-off - great for weeknight cooking and company!

  • 4 6-ounce halibut fillets (or substitute cod, snapper or sea bass)
  • 2 tablespoons capers, rinsed
  • 1 tablespoon finely grated lemon zest
  • 1/2 cup finely grated Parmesan
  • 4 tablespoons unsalted butter, at room temperature

Serves 4

  1. Preheat the oven to 400F.
  2. Line a baking dish with parchment paper and place the fillets on top of the paper.
  3. Combine the capers, lemon zest, Parmesan, and butter in a small bowl. Stir well to combine and add a couple of grinds of black pepper to taste.
  4. Spread some of the butter mixture over each fillet.  Roast, uncovered, for 15 to 20 minutes or until the top of the fish is golden and the fish is cooked through (fish color will go from sligthly translucent to almost chalky white).  Serve immediately.
