Mashed Potatoes with Green Onions (Champ)

This mashed potato recipe is based on the Irish dish 'champ', where a pat of butter is placed in a well in the center of a mound of mashed potato. Each bite of potato is then dipped in the butter for the ultimate comfort food.

  • 2 pounds russet potatoes, peeled and cut into 1-inch pieces
  • 1/2 cup heavy whipping cream or half-and-half
  • 2 ounces (4 tablespoons or 1/2 stick) butter
  • 1 bunch green onions (scallions), washed and thinly sliced (about 1 1/3 cups total)

Serves 4 to 6

Note:  The potatoes are pictured above with Beef Stew with Guinness Stout.

  1. Place the potatoes in a large pot and cover with cold water. Bring the water to a boil and cook the potatoes until very soft, about 15 to 20 minutes.
  2. Meanwhile, bring the cream and butter to a simmer in a small, heavy saucepan over medium heat, stirring often. Mix in the green onions, and then remove from heat, cover, and allow to steep while the potatoes cook.
  3. Drain the potatoes thoroughly. Return the potatoes to the same pot and use a potato masher or fork to mash with the cream mixture. Taste and season with salt and pepper as desired. If necessary, reheat the potatoes gently over low heat, stirring often.  Serve hot.

I tried this today (Pan Frying Fish) and it was great. The fish was Spanish Mackerel. Thanks for the video. Your presentation was very well done.
