  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 6 cups mixed berries
  • 1 1/4 cups plain yogurt
  • 1/2 cup coconut milk

Serves 4

  1. Make a simple syrup by combining the sugar and water in a small saucepan. Bring to a boil and cook for 2 minutes, until sugar is dissolved and mixture is clear. Remove from heat and let the syrup cool completely.
  2. In a blender or food processor, combine the cooled syrup with the berries, yogurt, coconut milk and lime juice. Blend until smooth and frothy. If you like, add some ice cubes and blend again.
  3. Serve well chilled in tall glasses with a mint leaf for decoration.

Thanks. I have just started getting into the kitchen. My wife is a southern style cook and likes to make just about everything fried and unhealthy as possible. As I am about to hit the 40 yr old mark, I can't continue to eat this way unless I want to keep seeing those strange looks on my doctors face when he gets my yearly labs back. In other words, for the sake of my family's health, I have decided to take over the kitchen. Hopefully, I can do this without offending anyone. Thanks for the tips!
