Pesto Sauce

Pesto is a delicious blend of fresh basil, garlic, and Parmesan cheese. Spread it on toasted bread rounds or mix it with hot pasta for a quick and light meal.

  • 1 large garlic clove, peeled and smashed
  • 3 tablespoons pine nuts
  • 1/3 cup freshly grated Parmesan cheese
  • 1 cup loosely packed fresh basil leaves
  • 1/3 cup extra virgin olive oil

Makes 1/2 cup

  1. In the bowl of a food processor add the garlic and process until the garlic is finely chopped. Add the pine nuts, cheese, basil, 1/2 teaspoon salt and 1/4 teaspoon pepper and process again until everything is finely chopped.
  2. With the motor running, add the oil in a slow, steady stream, blending until well incorporated.
  3. Serve the pesto tossed with hot pasta, on burgers, as a spread for crostini, or in any other delicious way you desire!
