Pound Cake with Honey

Pound cake is delicious for dessert and makes a satisfying afternoon snack. It is an easy cake to make, but one that everyone will love.

Ingredients

  • butter for greasing the pan
  • 8 ounces (2 sticks) unsalted butter, at room temperature (but not too soft)
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • 1 teaspoon freshly grated lemon zest
  • 2 cups sifted cake (or pastry) flour (sift first, then measure)
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • Special equipment:
  • 9-inch by 5-inch loaf pan

Serves 6 to 8

  1. Preheat the oven to 350F.
  2. Grease the bottom of a loaf pan with butter. Line the bottom of the pan with parchment paper and then butter and flour the bottom and sides of the pan.
  3. In the bowl of an electric mixer fitted with a paddle attachment, cream together the butter and sugar until well blended, light and fluffy (about 4 minutes.)
  4. Crack the eggs into a measuring jug. With the mixer on low speed, add the eggs one at a time to the butter/sugar mixture, mixing well between each addition. Scrape down the sides of the mixing bowl as necessary to ensure all ingredients are being equally mixed.
  5. Add the honey, vanilla extract and the lemon zest and briefly mix to incorporate.
  6. Whisk together the sifted cake flour, salt and baking powder in a small bowl. With the mixer on low speed, slowly add the flour mixture to the bowl. Mix just until combined and then use a rubber spatula to finish the mixing. Pour the batter into the prepared loaf pan and smooth the top with a spatula.  
  7. Bake the pound cake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, and then turn out onto a wire rack and cool completely before slicing.
