Roast Chicken with Sweet Onions

Roast chicken means moist, tender meat and a mostly hands-off meal. For a quicker version, use boneless chicken breasts and reduce the cooking time to about 20 minutes.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon sweet paprika
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne
  • 3 pounds bone-in chicken pieces (thighs, drumsticks, and/or breasts)
  • 1 sweet onion, peeled and cut into 1/2-inch wedges

Serves 4 to 6

  1. Preheat the oven to 500F. Place the rack in the center of the oven.
  2. In a large bowl combine the olive oil, paprika, cinnamon and cayenne. Add 1 1/2 teaspoons salt and 1 teaspoon pepper.
  3. Add the chicken pieces and onion wedges to the spices. Toss well so that each piece is coated in the spice mixture (use your hands for best results.)
  4. Place the chicken in a shallow baking dish, skin-side up.  Chicken can be touching but should be in a single layer.  Scatter the onions around the dish.
  5. Roast the chicken (uncovered) for 30 to 35 minutes, until the skin is golden and the onions are nicely brown and caramelized.  Serve hot.
