Salad with Apples and Walnuts

This salad pairs really well with pork and chicken dishes, particularly if the main course is on the heavier side. Replace the apple with a pear, if you like.

  • 1 cup walnut halves, toasted
  • 1 large sweet apple, such as Fuji or Red Delicious
  • 4 to 6 ounces mixed green salad leaves
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil

Serves 4


  1. Core the apple and slice it thinly. Combine the walnuts, apple slices and mixed greens in a large bowl.
  2. Make the vinaigrette by pouring the vinegar in a small bowl and adding the olive oil in a slow stream while constantly whisking. Add a pinch of salt and pepper and whisk again.
  3. Toss the greens with the vinaigrette and serve immediately.
