Spinach with Garlic and Lemon

Spinach is simple to prepare, super healthy and inexpensive - now that's a great side dish, especially when it tastes this good! Try this recipe with arugula and chard, too.

  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, very thinly sliced
  • 2 pounds fresh spinach, arugula or chard, thick stems removed and leaves roughly chopped, washed and blotted dry
  • 1/2 lemon (or to taste)

Serves 4 to 6

  1. Heat the olive oil in a large skillet over medium heat. When hot, add the sliced garlic and cook, stirring, for 30 seconds.
  2. Add as many greens to the pan as will fit and cook, stirring, until the leaves begin to wilt. Continue adding more greens as room permits. Once all greens have been added and all greens are wilted, season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  3. Squeeze the lemon over the greens and toss well to combine. Taste and season with more salt, pepper and lemon as desired. Serve immediately.

I had to send you an email to tell you that you have seriously changed my cooking life!  I have never been much of a cook. I have a busy career and have young children and was always scrambling at 5pm to make something quick or to get take out.  It always tasted just OK but I wanted to eat healthier.  Then I got turned onto your website and it is amazing!  The meals taste great and are really easy to make.  I really ENJOY cooking now and my husband is thrilled.
