Sweet Cornbread

Cornbread is the perfect (and most simple) side for hearty comfort foods such as chili and beef stew. Homemade cornbread is easy, quick and delicious.

Ingredients

  • 3/4 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 cup yellow corn meal
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup plus 2 tablespoons milk
  • 1 large egg
  • 3 tablespoons canola or vegetable oil
  • 1 1/2 tablespoons butter, melted

Serves 6 to 8

  1. Preheat oven to 350F. Grease an 8-inch by 8-inch square baking pan with cooking spray or a little oil.
  2. In a medium bowl combine the flour, sugar, corn meal, baking powder and salt. Whisk to combine.
  3. In a small bowl combine the milk, egg, canola or vegetable oil and melted butter; mix well with a fork to break up the egg and to combine.
  4. Add the milk mixture to the flour mixture; stir with a wooden spoon just until blended.
  5. Pour batter into the prepared pan.
  6. Bake for about 18 to 20 minutes, or until the top is slightly golden, the edges are starting to brown and a toothpick inserted in the center comes out clean.
  7. Cool the cornbread in the pan on a wire rack.  Slice and serve warm or at room temperature.
