Yiani’s Greek Burgers

I love a good burger and this particular hamburger is one of my favorites. The recipe came from a taxi driver I met in Athens who also happens to be an adventurous home cook. Thank you for sharing, Yiani!

Ingredients

  • 1 pound lean ground beef
  • 1/2 green bell pepper, finely chopped
  • 1/2 small red onion, finely chopped
  • 1 medium tomato, seeds removed and finely chopped
  • 1 egg
  • 2 tablespoons milk
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup plain breadcrumbs (such as Panko)

Serves 4

  1. Using your hands or a wooden spoon, combine all of the ingredients except the breadcrumbs in a large bowl.  Cover the bowl and place it in the refrigerator for an hour, or let it sit at room temperature for 15 minutes.
  2. Stir the breadcrumbs into the meat mixture so that they are evenly distributed.
  3. Form the meat into 4 uniform patties.  Season both sides of each patty with salt and pepper.
  4. Prepare a charcoal fire or heat a gas grill on medium-high. Brush the cooking grate of the grill with a little olive oil to prevent the meat from sticking.
  5. When hot, add the burgers and cook on one side until lightly browned, about 4 minutes.  Turn the burgers over and cook for 3 to 4 minutes more or until the meat reaches your desired doneness.
  6. Serve immediately on toasted hamburger buns with your choice of condiments.
